Toffee Oaty Squares

This is a recipe I have made a few times, and it's from Sue Lawerence's Book of Baking. This is a lovely recipe for treat bars that have an oaty base, toffee centre and a crumble top.




For this recipe you will need;

200g Plain flour
125g Porridge oats
150g Light muscovado sugar
1/2 tsp Bicarbonate of soda
150g Unsalted butter (diced) plus extra for tin!
150ml Milk
200g Plain toffees

Firstly, you want to preheat your oven to 180c (conventional) and butter a 23 x 33cm swiss roll tin. As you can see I don't have a swiss roll tin so I am using a pyrex dish, a standard baking tray would do the trick also.


Place the flour, oats, sugar and bicarbonate of soda into a food processor (or bowl) with a pinch of salt. Mix briefly, then add the butter and combine until the mixture starts the stick together.


Press three-quarters of the mixture into your dish or tray and flatten into an even base layer.


Then in a pan add the toffee and milk, over a low heat stir until smooth. Or in the mircowave on a medium setting stirring occasionally until melted.


Then pour gently over the base and sprinkle the remaining oat-y mixture on the top. Bake for around 20 minutes or until the edges are golden brown.




Once out if the oven, ease the bake away from the edges using a spatula or a knife. Leave to cool then cut into squares.

They are really tasty and make a great little treat to add to a lunch box or a little desert - just pop in the microwave for about a minute and why not serve with some icecream?
