Chicken Pesto Grills with Rapid Roastini
This is a really simple easy recipe that can be whipped up in 20-30 minutes, first you need;
- Chicken breast fillets (One per person)
- A Jar of ready made, or freshly made pesto
- Cheese - I used mozzarella
- Optional Extra - Bread crumbs
- A pack of Gnocchi
- 1Tbsp Veg oil
First thing first preheat oven to 200c (fan assisted) 180 (conventional). Take your chicken breasts and score the top in a slight diagonal motion, making sure that to cut all the way through the meat. Then taking the pesto, I have chose basil pesto, take about a tablespoon of pesto per chicken breast, and place it in the slits. Rubbing the excess on the top, to coat the whole top of the chicken well.
After dicing the mozzarella, sprinkle it over the chicken, for an extra crunchy topping, add breadcrumbs. Then place in the oven, on a middle shelf for 20 - 25 minutes or until cooked through.
Next, taking a frying or sauté pan heat the pan and with a glug of veg oil. Fry the Gnocchi about 4 or 5 minutes on each side, or until golden brown.
Serve with a salad or steamed vegetables and enjoy!
