Homemade Chilli Con Carne
Another great recipe, very filling, great for winter as its something different to the traditional soups and stews.
Ingredients
1 Tbls Oil (ideally veg or sunflower)
1 Onion (I prefer red)
4 Cloves of garlic (or to taste)
Beef mince - around 500g
1 Stock cube
1 Tbls Paprika
2 Tsp Smoked Paprika
1 Tbls Ground Cumin
2 Tsp Mild Chilli powder (or a fresh chilli)
1 Tsp Ground coriander
1 Tbls Ground Turmeric
2 Tbs Fajita seasoning
1 Tsp Oregano
1 Bay Leaf
A tin of chopped tomatoes (Or passata)
1 Tbls Tomato Puree
400ml water
Kidney Beans
Place pan on a medium heat with a splash of oil, followed by the onions. Crush the garlic and place the lid, and allow the onions to go soft. After about 5 - 10 minutes, increase the heat then, add the mince and sprinkle stock cube over. With your wooden spoon break up the mince into small pieces so it cooks through.
Once the mince is browned, add the herbs and spices and mix through, then reduce to a medium heat; add chopped tomatoes and tomato puree. Cook through for 5 mins then add the water and bring to the boil. Once it is at a roiling boil, reduce to a simmer and cover with the lid.
Now if you have time, ideally leave for an hour checking regularly, then add the kidney beans and simmer for another half an hour. If not just add the kidney beans and simmer.
Serve with rice, nachos, or sweet potato chips/wedges! Or if having guests over why not a little of everything :)
